These brownies are so juicy and luscious it’s hard to stay away from them. A healthy alternative if you want to treat your guests on something sweet but healthy.

Brownies
2 big sweet potatoes (500g)
6 tbsp of raw dark cocoa powder
8 dates
1 cup grounded oats
1 pinch of salt
1/3 cup of maple syrup
1/3 cup of coconut oil
1 tbsp of vanilla extract
Icing
3 tbsp of peanut butter
3 tbsp of coconut oil
2 tbsp of maple syrup
3 tbsp of cacao powder
Method
Preheat the oven to 175 degrees.
Peal the sweet potatoes, cut into pieces and let them steam for 25 minutes until they become very soft.
Put the pitted dates together with the coconut oil into the blender. After the dates are blended add the sweet potatoes.
Transfer the batter into a bowl and mix well with the rest of the ingredients. Once you have smooth mixture put it into a greased baking form and bake for 50 minutes.
In the meantime you prepare the icing. Melt coconut oil with peanut butter, maple syrup, and cacao powder to a uniform mixture and set aside.
Once the brownies are baked and have cooled down for 30 minutes you can add the icing on top and cut the brownies into squares….enjoy!
